Oenology ( pronounced eh-NAH-low-gee) is the art and science of winemaking. It combines a series of carefully chosen techniques with the unquantifiable touch of taste and aroma evaluation, guided by intuition. It is the choice of grapes, vineyard blocks, yeast for fermentation, balance of chemistry, timing of various mechanical practices, and barrel selection. All winemaking follows some common path, but every winemaker has her own special formula, directed by her sense of style and taste.The aim of Brooklyn Oenology is to make wine, whenever possible, from grapes that are grown within New York State. We feel there is a lot of pride to be had in the New York wine industry, because there is some great stuff being made in our state! New York also has the fourth largest wine industry in the country, after California, Washington, and Oregon.BOE does not have its own vineyards; we purchase our fruit from other New York growers, and then do our winemaking. In the future, we plan to open a winery in Brooklyn itself; for now, we are fermenting at Premium Wine group in Mattituck on the North Fork of Long Island. Premium is where we rent space and equipment to do our winemaking until we open our own facility.
